Grilled Pork with Mango & Key Lime Salsa and Pickled Red Onions

Ingredients

  • 4 thin pork cutlets, pounded to 1/4 inch
  • 1/2 cup fresh lime juice
  • 1 medium red onion, thinly sliced
  • 1 jar (16 ounces) Frontera Mango-Key Lime Salsa

Preparation

Step 1

Marinate pork or chicken in ¼ cup lime juice mixed with ½ teaspoon salt for 1 hour. Marinate onion in remaining ¼ cup lime juice and ½ teaspoon salt in a small bowl. Grill pork just until juices run clear. Serve with salsa and pickled red onions.
