Tomato Basil Soup

Ingredients

  • 1 (28 0z) can whole peeled tomatoes, drained
  • 3 cups tomato juice
  • 2 cups chicken broth
  • 15 + basil leaves
  • 1 1/2 sticks unsalted butter
  • 1 1/2 cups fat free half n' half
  • Salt and Pepper to taste

Preparation

Step 1

Place tomatoes, tomato juice, and chicken broth in dutch oven. Simmer for 45 minutes. Stir in basil leaves. Cool slightly.
Puree with immersion blender. Put back on stove,add butter and half n' half. Season with salt and pepper to taste.
