Pepperoni & Mozzarella Stuffed Chicken Breasts

Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 2 oz. mozzarella cheese
  • Approximately 16 slices pepperoni
  • 1 large egg
  • 1/2 c. bread crumbs
  • 6 T. vegetable oil
  • Salt & pepper to taste

Step 1

Trim the chicken breasts. Slice each breast in half diagonally to create 2 diamond like shaped pieces. Using a small sharp knife, cut a pocket into the side of each breast. Be sure not to cut all the way through the meat but just into one side so filling stays in. Stuff each piece of chicken with 1/2 cheese and 4 slices pepperoni. Lightly season each piece with salt & pepper. Set aside. Preheat oven 350* and line a baking sheet with foil. Begin to heat a large skillet with 6 T. oil over med-high heat. Collect three shallow dishes and put flour in one, egg in another and bread in third. Beat egg until it's even consistency. One by one coat each piece of chicken in flour, egg, bread crumbs. (Make sure to keep pocket pinched closed to keep in fillings) Make sure oil is hot so not to make the chicken greasy. Place all 4 pieces of chicken in skillet and cook until it's golden brown and crispy on each side. No more then 2-3 minutes. Remove chicken and transfer to baking sheet, place in oven. Finish baking the chicken for about 25 minutes or longer depending on size. Remove from oven, make sure it's thoroughly cooked and serve immediately.
