Step 1

For oven roasting, use a shallow roasting pan and preheat oven to 425. Remove roast from refrigerator about an hour out to allow to come to room temperature.

A whole beef tenderloing is approx 5 lbs and will feed 8-10 people. A thermometer reading of 130-135 will = medium rare and will continue to cook another 10-15 degrees upon being removed from the oven. MED Rare=145 degrees, MED=160 and Well=170

For Grilling: Turn on all burners and create a hot grill. The meat should be seared then the heat turned down. Cooking time for a 5 lb roast should be roughly 30 minutes for med rare. Use meat thermometer for more accurate reading.
