Hamburger Vegetable Soup

By

Tomato based vegetable soup

Ingredients

  • 2 cans beef broth
  • 1 lb. lean hamburger - cooked & drained
  • 2 26 oz. cans Tomato Sauce
  • 2 26 oz. cans petite diced tomatoes
  • 1 large onion - diced/sliced
  • 1-2 pkgs frozen mixed vegetables OR 2 14 oz. cans Veg-All mixed vegetables
  • 2 14 oz cans or frozen white corn (to taste)
  • 1 1/2 cups uncooked ziti noodles (cook before adding to soup)
  • 1 14 oz can Navy beans
  • water (4-8 cups as desired - more can be added later if nec.)
  • Salt & peppter to taste

Preparation

Step 1

Cook lean hamburger, drain and add to large soup pot
Add tomato sauce, diced tomatoes and water. (I used 1 can of water for each large can of sauce or tomatoes)
Add diced or sliced onion.

Meanwhile, cook 1 1/2 cups of ziti noodles per pkg. directions, drain & set aside.

After soup has cooked an hour or so, start adding frozen & canned vegetables. Add cooked ziti noodes the last thing. Check density of soup and add more water if necessary. Cook a little longer. Add salt & pepper to taste. Serve.

Because of tomato sauce, this soup liquid tends to get thicker as it cooks down, so each time I warm up an individual bowl, I add a little more water - usually no more than 1/3 cup per bowl.
