Chicken Zoneitorri

Ingredients

  • 20 oz. skinless boneless chicken breast
  • olive oil or coconut oil
  • 3 cloves garlic, chopped
  • 2 cups green bell pepper, chopped (1 carb)
  • 2 cups red bell pepper, chopped (1 carb)
  • 1 1/2 cups onion, chopped (1 carb)
  • 4 cups mushrooms, sliced (1 carb)
  • 1 - 15 oz. can stewed tomatoes (2 carbs)
  • 1/4 cup dry white wine (1/2 carb)
  • 1 teaspoon italian seasoning
  • dash of salt & pepper

Preparation

Step 1

Lightly salt & pepper chicken pieces. Using a large skillet, brown chicken pieces on each side in olive oil on medium-low heat 3 to 4 minutes on each side. Remove from pan, cover & keep warm.

Add peppers & onions & cook on medium heat for 5 minutes. Then add mushrooms & garlic. Continue cooking another 5 to 8 minutes. Add tomatoes, wine, and italian seasoning.

Place chicken pieces back in skillet, cover & simmer about 15 minutes turning once.

Serve chicken pieces with vegetables.
