Famous Barr’s French Onion Soup

Ingredients

  • 4 large yellow onions, peeled
  • 1 tablespoon olive oil
  • 1 teaspoon freshly ground pepper
  • 1 heaping tablespoon paprika
  • 3 bay leaves
  • 1 tablespoon salt
  • 3/4 cup all-purpose flour
  • 64 ounces (8 cups) beef broth
  • 1 cup dry white wine
  • 1 baguette, sliced 1/2 inch thick
  • 16 ounces shredded mozzarella cheese

Preparation

Step 1

Cut onions in half and slice with the grain about 1/8 inch thick. Heat olive oil in stockpot and add sliced onions. Sauté slowly for 30 minutes, stirring frequently.

Add paprika, salt, pepper, bay leaves and flour. Mix well over medium heat. Stir while cooking for five minutes.

Gradually add the beef broth and wine while stirring. Bring to a boil and simmer soup, covered for at least 30 minutes.

To serve, ladle soup into ovenproof soup bowls, top with slices of toasted baguette and cover each serving with grated cheese. Place under broiler and melt cheese until golden and bubbly.
