Cream of Tomato Soup with Orzo

Ingredients
- 1 teaspoon olive oil
- 6 cloves garlic, minced
- 46 ounces tomato juice
- 3 (14.5-oz.) cans diced tomatoes, pureed with juice
- 1 tablespoon minced dried basil
- 1 teaspoon sugar
- 8 ounces orzo
- 1 1/2 cups Half-and-Half

Preparation
Step 1
Bring medium saucepan of lightly salted water to a boil.
In large saucepan, heat oil over medium heat. Add garlic, and cook, stirring often, 1 minute. Add tomato juice, pureed tomatoes, basil and sugar, and simmer 5 minutes.
While soup is simmering, add orzo to boiling water. Cook, until tender, 6 to 8 minutes; drain.
Remove soup from heat and stir in Half-and-Half. Add salt and pepper to taste; stir in orzo.
