Ingredients
- 2 soaked and seeded ancho chilies
- 1 onion
- 1 can fire roasted tomatoes
- 2 garlic cloves
- 6 cups chicken broth
- 4 torn corn tortillas
- 1 cup shredded chicken
- 1 tbsp cumin
- salt
- diced avocado
- cilantro
- crispy tortilla strips
- mexican cheese
- lime juice
Preparation
Step 1
Puree 1st 4 ingredients and then fry in a small amount of canola oil. Add broth, chicken, corn tortillas and 1/4 cilantro and simmer until it starts to thicken up. Season with salt and cumin. Serve with the remaining ingredients.
