Mixed Berry Corn Mini loaves

Ingredients

  • 1 c. yellow cornmeal
  • 1 c. flour
  • 2/3 c. sugar
  • 2 t. B.P.
  • 1/4 t. salt
  • 2/3 c. milk
  • 1/3 c. corn oil
  • 2 large eggs, lightly beaten
  • 2 t. finely shredded orange peel
  • 3/4 c. raspberries
  • 3/4 c. blueberries

Preparation

Step 1

Spray 5 mini loaf pans with Pam. Combine dry ingredients in large bowl. Mix liquid ingredients in separate bowl. Stir to combine. Gently fold in berries. Divide batter in loaf pans.

Bake 400* 18 to 20 minutes until toothpick comes out clean. Let set in pans 5 minutes then take out on wire rack to cool.

Note: Will make 12 to 14 muffins. Bake 12 to 15 minutes.
