Ingredients

  • Crust
  • 3 cups frozen hash brown potatoes, thawed
  • 1/2 cup minced onion
  • 1 large egg, beaten
  • 2 T flour
  • 1 t. kosher salt
  • 1/4 t. pepper
  • 1/8 t. paprika
  • Topping
  • 5 large eggs
  • 3 T whole milk
  • 1/2 t. kosher salt
  • 1/8 t. pepper
  • 2 uncooked bacon strips, chopped
  • 1/3 cup diced red bell pepper
  • 1 1/2 cups shredded cheddar
  • 1/2 lb. sausage, cooked and crumbled
  • 1/4 cup scallions

Step 1

Preheat oven to 375. Spray a 9 inch round cake pan with pam.
Combine potatoes, onion, egg, flour, salt, pepper, and paprika in a mixing bowl. Toss until mixed and spread in pan. Bake for 30 minutes, or until golden brown.
Topping: Whisk eggs, milk, salt and pepper in a mixing bowl. Set aside. Cook the sausage, cool, and crumble. Cook the bacon in a small skillet and remove when crisp. Cook the bell pepper in the bacon fat. Pour in the egg mixture and cook until nearly set.
Top the crust with 3/4 cup of the cheddar, followed by the egg-pepper mixture, bacon and sausage. Sprinkle on the remaining cheese and bake for 15 minutes until the cheese is bubbly. Cool 5 minutes, top with scallions, and cut into slices
