Fiesta Pizza

Ingredients

  • 2 large pizza crusts
  • 15 ounce can black beans, rinsed and drained
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 10 ounce can tomatoes and chopped green chilies
  • 1/2 cup salsa
  • 1/2 cup pizza sauce
  • 1 bunch green onions, chopped
  • 1/2 green bell pepper, chopped
  • 2 cups shredded Cheddar cheese
  • 3 tablespoons sliced ripe olives

Preparation

Step 1

Preheat pizza stone in 450º oven for 30 minutes. Crisp crusts in oven for 2 minutes and remove.

Stir together black beans, cumin, chili and garlic powder and mash with a fork or potato masher. Drain tomatoes and chilies and add to bean mixture. Spread mixture over crust.

Combine salsa and pizza sauce; spread over bean mixture. Sprinkle with onion, bell pepper, cheese, and olives.

Place pizza on aluminum foil and bake on pizza stone for 10 minutes or until cheese melts.
