Penne with Grilled Vegetables and Feta

  • 2 tablespoons extra-virgin olive oil
  • 4 large garlic cloves, minced
  • 2 pounds tomatoes, halved
  • 1 med yellow summer squash, julienned
  • 1 med zucchini, julienned
  • 1 red bell pepper, julienned
  • 1 purple onion, sliced thin
  • Salt and black pepper
  • 1/4 cup loosely packed chopped fresh basil
  • 1 pound penne (5 cups in glass measure)
  • 8 ounces crumbled Feta cheese,

Preparation

Step 1

Prepare penne according to package directions.

Combine the olive oil and garlic. Brush on the cut side of the tomatoes. Toss the remaining olive oil with the squash, zucchini and peppers. Sprinkle all the vegetables with salt and pepper.

Prepare medium-hot grill and grill the tomatoes, until charred and soft, about 10 minutes. When cool enough to handle, peel and seed the tomatoes. Combine in the blender with the basil and process until smooth. Season to taste with salt and pepper. Set aside.

Grill the squash, zucchini, peppers, and onion in a grill wok or basket tossing frequently, until tender and lightly charred, about 5 minutes. Set aside.

Toss the pasta with the feta cheese. Add the tomato-basil sauce and toss. Add the grilled vegetables and toss once more. Serve immediately.
