Spinach and Pear Salad with Celery Seed Dressing

Ingredients

• CELERY SEED DRESSING
• 1 teaspoon celery seeds
• 1 teaspoon salt
• 1 teaspoon dry mustard
• 1/2 teaspoon paprika
• 1/2 cup sugar
• 1 teaspoon grated onion
• 1/4 cup plus 2 T apple cider vinegar
• 2 Tablespoons raspberry vinegar
• 2 teaspoons fresh orange juice
• 1 teaspoon fresh lemon juice
• 3/4 cup corn oil
• SALAD
• 2 1/2 pounds spinach
• 1 large head of romaine lettuce
• 2 11 ounce cans mandarin orange segments -- drained
• 2 pears -- thinly sliced
• 1 red onion -- thinly sliced in rings
• 1/2 cup walnut pieces -- toasted

Preparation

Step 1

To prepare dressing, mix the dry ingredients in a medium bowl. Add remaining ingredients except the oil. Add oil slowly, mixing with whisk until dressing becomes thick. Add enough dressing to salad to moisten, and toss.
