Ingredients

  • 3 Tbs. olive oil
  • 1 lb. Italian sausage
  • 4 c.sliced mushrooms
  • 4 cloves garlic, minced
  • 4 Tbs. chopped parsley
  • 1/2 c. white wine
  • 1/2 c. chicken stock
  • 4 Tbs. butter
  • 12 cherry tomatoes, quartered
  • 1 lb. spaghetti
  • 3 eggs (pasteurized)
  • 1 c. Parmesan/Romano mix

Preparation

Step 1

Heat olive oil. Saute sausage, then add mushrooms and cook (around five minutes). Add garlic and 2 Tbs. parsley. Saute briefly. Add wine and stock and cook until reduced by half (5-10 minutes). Add butter and tomatoes; turn heat off, allowing butter to melt.

Beat together eggs, cheeses, and rest of parsley. Combine hot pasta, sauce, and egg mixture. Toss quickly. 6 servings.
