Lobster Bisque- from Babs

Ingredients

  • 1-2 sm lobster tails cut into pieces
  • 1 med onion (pureed)
  • 1.5 sticks of butter
  • 3/4 c. flour
  • 2 cans chicken broth
  • 1 c. heavy cream
  • 2 c. half and half
  • 1 sm can tomato paste

Preparation

Step 1

Cut lobster into pieces. Saute onion, butter and lobster. Slowly add in flour and chicken broth and whisk until fully blended while bringing to a mild boil. The roux will start to thicken. Add half and half and turn heat to a simmer and continue to stir occasionally. Add heavy cream approx 20 minutes out from serving. Use approx 1 tbs of tomato paste and whisk into bisque for a light pink color.

*Serve in small bowls and optional splash of brandy to cut down on the cream.
