Shiitake Mushroom Omelet

Ingredients
- Olive oil spray
- 2 medium shallots, chopped
- 4 shiitake mushrooms, thinly sliced
- 4 ounces golden mushrooms, sliced
- 1 tablespoon sherry
- Salt and white pepper, to taste
- 4 ounces shredded mozzarella cheese
- 6 eggs, divided into two measuring cups

Preparation
Step 1
Sauté shallots and mushrooms in omelet pan until tender. Add sherry, salt and pepper and cook one minute longer.
Whisk 3 eggs and 1 ½ tablespoons water.
Spray olive oil in two omelet pans and heat over medium heat to 300°F. Add eggs; cover and cook for 5 minutes. Top with shallot-mushroom mixture and cheese. Using spatula, fold egg mixture over filling; cover. Cook 3 minutes more or until cheese is melted.
