Ingredients

  • 6 flour tortillas
  • 4 medium cremini mushrooms, chopped
  • 2 green onions, thinly sliced
  • 3 ounces canned chopped green chiles
  • 8 eggs
  • 6 ounces shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 8 ounces fresh salsa

Step 1

Adjust oven rack to lowest position. Preheat oven to 350°F. Coat 6 ramekins with cooking spray and place on sheet pan. Line prepared ramekins with tortillas, pressing against bottom and sides (tortillas may extend over top).

Wisk together the eggs and salt. Combine mushrooms, chiles and green onions in another bowl and divide among ramekins. Sprinkle with cheese. Pour eggs into each ramekin.

Bake 35 minutes, rotating pan after 20 minutes. Cool on rack 5 minutes, then unmold and transfer to serving plates.

Serve with fresh salsa.
