Ingredients
- 3 lg. onions
- 1/4 cup sweet butter
- 1 tsp. sugar
- 1 Tbs. salted butter
- Parmesan cheese
- 1/3 cup olive oil
- 1 1/2 qts. boiling beef stock
- 1 small clove garlic
- cayenne pepper
Preparation
Step 1
Peel onions thin and separate. Heat oil. Add onion rings and cook very slowly. When transparent, add sweet butter. Continue to cook over low flame until limp. Do not season. Add boiling stock and sugar, stirring liquid gradually into transparent onion rings and continue to stir gently from bottom of pan until it comes to a boil. Add salted butter and garlic, chopped finely. Lower heat and simmer 15 min. Serve with toast, cheese and cayenne pepper.
