Ingredients

  • 6 slices bacon, finely chopped
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, pressed
  • 2 (10-oz.) packages frozen chopped spinach, thawed, drained
  • 2 (14.5-oz.) cans diced tomatoes, drained
  • 1 tablespoon Italian seasoning
  • 12 ounces Spaghetti pasta, cooked and drained
  • 1 cup shredded part-skim Mozzarella cheese

Preparation

Step 1

DO-AHEAD TIP: Cook pasta according to package directions.

Cook the bacon in a large skillet over medium-high heat for 5 minutes or until crisp, stirring occasionally; drain and set aside. Add onion and garlic to the skillet; cook and stir for 2 minutes. Add spinach; stir. Reduce heat to medium; cook for 3 minutes, stirring frequently. Add tomatoes and seasoning; cook for an additional 5 minutes, stirring occasionally. Place warm pasta in a large bowl and top with sauce; sprinkle with the cheese and reserved bacon.

SERVING SUGGESTION: Serve a big salad on the side.
VEGETARIAN: Use soy bacon.
KOSHER: Use turkey bacon and your favorite soy cheese.
