Ingredients
- 1 Tbsp olive oil
- 1 large onion (chopped)
- 4 oz. diced green chiles
- 1 tsp. chili powder
- 1 tsp. cumin
- 1 large garlic clove (minced)
- 1/2 tsp. oregano
- 1/4 tsp. cayenne
- 6 cups chicken stock
- 1 can diced tomatoes
- 1 lb. boneless chicken breast (cut into small pieces)
- 1 cup corn kernels
- 1/3 cup cilantro (chopped)
- Salt and pepper
- Tortilla chips
- Jack cheese
Preparation
Step 1
Heat oil in large pot.
Saute onion until soft.
Add chiles, chili powder, cumin, garlic, oregano, and cayenne, and cook 1 minute.
Add chicken stock and tomatoes and bring to boil.
Add chicken, corn, cilantro, and salt and pepper.
Cook until chicken done and soup fully blended.
Serve over tortilla chips and grated cheese.
