Wild Rice Pilaf

Ingredients

  • 2 tablespoons butter
  • 1/4 cup vegetable oil
  • 1 medium onion, minced
  • 2 large stalks celery, coarsely chopped
  • 4 cups cooked wild rice mix
  • 3/4 cup dried red tart cherries
  • 1/2 cup chopped pecans
  • 3 or 4 scallions, finely chopped

Preparation

Step 1

Cook the rice as directed (1 cup wild rice mix equals approximately 1-1/2 to 2 cups cooked rice).

In a large skillet melt the butter with the vegetable oil. Add onions and celery and cook until soft and translucent. Add the cooked rice and stir and cook for several more minutes.

Remove from heat and stir in the dried cherries, pecans and scallions.

Add salt and pepper to taste, if desired.
