Franjelico Cupcakes

Ingredients

  • ICING:
  • 2 1/2 cups of flour
  • 1 1/2 cups brown sugar
  • 1 teaspoon baking powder
  • 100 g butter
  • 1 cup milk
  • 2 eggs
  • 1/4 cup peanut butter
  • 1/2 cup hazelnuts
  • 1/4 cup frangelico
  • 200 g butter
  • 3 cups icing sugar
  • 1 tablespoon frangelico

Preparation

Step 1

Pre heat the oven to 180C
Combine the flour, sugar and baking powder together into a bowl. Set aside.
Melt the butter in the microwave and then whisk in the milk and eggs.
Combine the wet mixture and the dry mixture together, then stir through the peanut butter, hazelnuts and the frangelico.
Spoon the mixture into cupcake cases ⅔ full.
Bake for 20-30mins
To make the icing, place the butter into a bowl and beat with and electric beater until light in colour. Then turn the beater down to low and add the sugar and frangelico. beat until combined.
Place into a piping bag and pipe onto the cooled cupcakes.
