IHOP Spinach & Mushroom Omelet

Ingredients

  • 1 tablespoon butter
  • 1/4 cup onions, chopped
  • 1/2 cup mushrooms
  • 1 cup fresh spinach
  • 3 eggs
  • 1/8 cup water
  • 1/4 teaspoon salt
  • 1/2 cup tomatoes, diced
  • 3/4 cup Swiss cheese, grated

Step 1

Melt butter in a saucepan over medium-low heat. Add onions and mushrooms; stir and cook until onions are soft but not brown. Add spicach; stir until jst heated through. Remove from heat and set aside. Beat eggs, water and salt in a mixing bowl. Heat a 12" frypan on medium-low; add a bit of oil and place egg mixture in pan. Add spinach mixture, tomato and 1/2 of cheese. Cover and heat until omelet starts to set. Remove lid and fold omelet from sides to the middle. If too difficult, just fold in half. Sprinkle with remaining cheese. Serve with side of holondaise, if desired.
