Shrimp Pops with Peanut Sauce

Ingredients

  • Pops:
  • 1 pound ground pork
  • 3/4 pound raw shrimp peeled and deveined
  • 1/2 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 1/4 cup panko bread crumbs
  • 1 Tbp soy sauce
  • 1 tsp ground ginger
  • 1/4 cup chopped green onion
  • 1/2 tsp fresh ground pepper
  • 1 Tbp chopped garlic
  • Sauce:
  • 1 cup unsweetened coconut milk
  • 1/2 cup peanut butter
  • 2 tsp grated lime zest
  • 4 Tbp fresh lime juice
  • 1 Tbp soy sauce
  • 1 Tbp brown sugar
  • Sriracha to taste
  • 1/2 tsp ground ginger

Preparation

Step 1

Soak bamboo shewers for 1 hour in water before grilling.

1. In a heavy saucepan combine the sauce ingredients. Place over medium heat and cook, whisking constantly, just until the sauce is smooth and slightly thickened (about 3 minutes). The sauce will continue to thicken as it cools. Remove from heat.

2. In a food processor pulse the shrimp and pork until a chunky paste is formed. Turn out into a bowl and add the remaining ingredients. Mix and blend well. Pour olive oil on a baking sheet and spread evenly on surface. With your hand take about 3 Tbp of shrimp mixture and roll into a oval shape about 3" long. Repeat until you have a tray filled with shrimp pops. Put some olive oil on your hand and roll each pop to coat with a little oil. Put the tray in the refrigerator and let the pops sit for 1 hour to firm up.
3. Remove from refrigerator and put a skewer into each pop. Warm up the grill for direct heat.
4. Grill each pop for 6 to 8 minutes over direct heat turning once or twice. Serve with peanut sauce.
