Ingredients

  • 2 1/4 cups flour (sifted and then measured)
  • 1/2 tsp. salt
  • 1 tsp. cinnamon + 1-2 tsp. more
  • 1 cup brown sugar (packed)
  • 3/4-1 cup granulated sugar
  • 3/4 cup salad oil
  • 1 cup coarsely chopped walnuts or pecans (be generous)
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 egg (slightly beaten)
  • 1 cup commercial buttermilk

Step 1

With electric mixer, blend the following ingredients together until feathery:
flour (sifted and then measured)
salt
1 tsp. cinnamon
brown sugar
granulated sugar
salad oil

Remove ¾ cup of this mixture for topping and place in a small bowl with:
1-2 tsp. cinnamon
coarsely chopped walnuts or pecans

Mix and set aside.

To remaining mixture, add:
baking soda
baking powder
egg
commercial buttermilk

Mix until smooth.

Grease and flour a 9 x 13 x 2-inch baking dish. Spoon wet mixture into baking dish and sprinkle with reserve topping, pressing lightly into batter.

Bake at 350 degrees (325 for glass) for 25 to 30 minutes. (Check with toothpick.)

Cut into squares and serve warm. 12-15 servings.
