Ingredients
- 1 1/4 cups whole wheat flour
- 2 teaspoons baking powder
- 1 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp nutmeg
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups bran buds
- 1 1/4 cups boiling water
- 1/4 cup brown sugar (packed)
- 1 tbsp or 6 packets Stevia
- 3/4 cup buttermilk
- 1/4 applesauce
- 1 egg
- 1/2 cup raisins
Preparation
Step 1
1 Preheat oven to 400F and lightly spray muffin pans with cooking spray or line with cupcake papers.
2 Stir together flour, baking powder & soda, spices and salt; set aside.
3 In large mixing bowl, stir together cereal and boiling water; let stand 2 minutes OR until water is absorbed.
4 Mix sugar into softened cereal until well combined.
5 Stir in milk and applesauce.
6 Add egg and raisins; mix well.
7 Add flour mixture, stirring just until combined.
8 Portion batter evenly into lightly greased muffin cups.
9 Bake about 16-18 minutes or until top of muffins are light golden and spring back when lightly touched.
