Ingredients

  • Marinade:
  • 1/2 cup white wine vinegar
  • 1/4 cup sugar
  • 1/4 cup vegetable oil (I used olive oil)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Veggies:
  • 1 med. size red bell pepper, chopped
  • (I used green bell pepper; would be good
  • to use both red, green and yellow)
  • 1 (16 oz.) pkg. Frozen white corn, thawed
  • 1 (16 oz. pkg frozen French-cut green beans, thawed
  • 1 (16 oz. pgk.) frozen small baby green peas, thawed
  • 3/4 cup celery (if desired)
  • 3/4 cup onion rings (if desired)
  • (and any other veggies you might like to add)

Step 1

Mixing Directions:
1. Whisk together first 5 ingredients in a large bowl.
2. Add red/green peppers and remaining ingredients; toss to coat.
3. Cover and chill at least 2 hours or up to 8 hours (overnight is good).
4. Stir well before serving (use slotted spoon to serve)

Note: I used the full recipe of the marinade, and only ½ of each package of the veggies—wasn’t sure it would all be eaten, so didn’t want to make too much the first try. It seemed fine to mix it like that—you can experiment with it, too.
