Ingredients
- Marinade:
- 1/2 cup white wine vinegar
- 1/4 cup sugar
- 1/4 cup vegetable oil (I used olive oil)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Veggies:
- 1 med. size red bell pepper, chopped
- (I used green bell pepper; would be good
- to use both red, green and yellow)
- 1 (16 oz.) pkg. Frozen white corn, thawed
- 1 (16 oz. pkg frozen French-cut green beans, thawed
- 1 (16 oz. pgk.) frozen small baby green peas, thawed
- 3/4 cup celery (if desired)
- 3/4 cup onion rings (if desired)
- (and any other veggies you might like to add)

Step 1
Mixing Directions:
1. Whisk together first 5 ingredients in a large bowl.
2. Add red/green peppers and remaining ingredients; toss to coat.
3. Cover and chill at least 2 hours or up to 8 hours (overnight is good).
4. Stir well before serving (use slotted spoon to serve)
Note: I used the full recipe of the marinade, and only ½ of each package of the veggies—wasn’t sure it would all be eaten, so didn’t want to make too much the first try. It seemed fine to mix it like that—you can experiment with it, too.
