All Thai'd Up Broccoli Salad

Ingredients

  • 1/4 cup toasted chopped peanuts
  • 1 1/2 tablespoons sugar/ other sweetener
  • 1 1/2 tablespoons hot water
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fish sauce
  • 1 1/2 teaspoons sesame oil
  • 1/2 teaspoon minced Thai chiles
  • 1 teaspoon peanut oil
  • 3 cups fresh broccoli florets
  • 1/2 cup red bell peppers, julienned
  • 1/2 cup sweet white onion, thinly sliced
  • 4 cloves garlic, minced
  • 1/2 cup fresh water chestnuts, 1/4" dice (optional)
  • Chile infused sesame oil
  • Fresh cilantro leaves for garnish

Preparation

Step 1

Blend peanuts, sweetener, water, lime juice, fish sauce, sesame oil, and chiles. Pulse in a food processor. Stir fry vegetables until al dente. Place in a large bow and pour dressing over it. Drizzle hot sesame oil over the top. Toss veggies with the dressing.

If using water chestnuts -

Can be served either hot or cold. Garnish with cilantro leaves and additional roasted chopped peanuts if desired.
