Ingredients
- 3 cups flour (we use whole wheat pastry flour)
- 1 tsp salt
- 1 1/4 cups vegetable shortening-chilled if desired (we use frozen butter which we grate)
- 1 egg
- 1 Tbsp vinegar
- 5 Tbsp ice water
Preparation
Step 1
Mix flour and salt together. With a pastry blender or two knives used in scissor fashion, work shortening into the flour and salt until pieces are the size of small peas. Beat the egg well and mix in the vinegar and water. Drizzle the liquid into the flour a little at a time and stir to combine with fork or pastry blender. Divide dough in 3 parts and form into disks. Cover completely with plastic wrap. Refrigerate at least 30 minutes. Roll out 1 pie crust at a time. (Can be frozen for later use.) Bake pies as directed in recipe.
