Ingredients

  • 3 CUPS CHICKPEAS, DRAINED AND RINSED
  • 1/4 CUP WATER
  • 1/4 CUP LEMON JUICE
  • 4 CLOVES GARLIC,FINELY CHOPPED
  • 1/2 TSP SALT
  • 3 TBSP TAHINI, THIS CAN BE FOUND IN THE ETHNIC FOOD SECTION OF YOUR LOCAL GROCERY STORE
  • 2 TBSP FRESH PARSLEY, CHOPPED
  • 3 TBSP OLIVE OIL

PLACE ALL INGRIEDIANTS IN A BLENDER OR FOOD PROCESSOR AND PUREE TO A FINE CONSISTENCY ADDING A LITTLE MORE LIQUID AS NECESSARY TOMAKE A SMOOTH, LIGHT PASTE.HUMMUS IS GREAT AS
A DIP WITH TOASTED PITA BREAD OR CUT VEGGIES.

YOU CAN ALSO USE IT AS A DRESSING ON SANDWICHES WITH SLICED AVACADO AND LETTUCE OR SPROUTS.
