Pine Nut and Green Onion Pilaf

Ingredients

  • 2 Tablespoons margarine
  • 1 cup rice -- uncooked
  • 1/2 cup scallion -- about 5
  • 1/2 cup pine nuts or slivered almonds
  • 2 1/2 cups chicken broth
  • 1 teaspoon grated lemon peel
  • 1/4 teaspoon salt
  • 1/4 cup scallions

Preparation

Step 1

Melt margarine in saucepan over medium high heat. Cook rice, scallions, nuts in margarine for 5 minutes, stirring occasionally, until nuts are light brown. Stir in broth, lemon peel, and salt. Heat to boiling, stirring once or twice, reduce heat. Cover and simmer for 14 minutes; remove from heat. Fluff with a fork. Cover and let stand 5 minutes. Sprinkle with scallion.
