Ingredients
- 2/3 cup flour
- 1/2 cup yellow cornmeal
- 1 Tbsp. sugar
- 1 1/2 tea. baking powder
- 1/4 tea. salt
- 1/2 cup (2 oz) shredded sharp cheddar cheese
- 1/2 cup sour cream
- 1/4 cup thinly sliced green onions
- 1 (8 3/4 oz.) can cream-style corn
- Dash of hot sauce
- 1 egg, lightly beaten
Preparation
Step 1
Preheat oven to 375 degrees
Combined flour and next 4 ingredients (through salt) in a large bowl; stir with a whisk. Combine cheddar cheese and the remaining ingredients in a small bowl; stir with a whisk. Add cheese mexture to flour mixture, and stir just until moistened.
Divide batter evenly amoung mini muffin cups coasted with cooking spray.
Bake at 375 for 10 minutes or until golden brown.
