Ingredients
- 1 8 ounce package Neufchatel cheese -- softened
- 1/2 cup sugar
- 1/4 teaspoon grated lemon rind
- Graham cracker crust
- 2 Tablespoons cornstarch
- 1 basket (1 pint) strawberries -- hulled and halved
- 1 Tablespoon lemon juice
- 1 cup fresh or frozen blueberries
Preparation
Step 1
Mix cheese, 1 tablespoon. of sugar and lemon rind in small bowl until blended. Spread evenly over bottom of crust. In saucepan, combine remaining sugar, cornstarch, strawberries, and lemon juice. Crush fruit with a masher. Cook over medium heat, stirring until thickened. Let cool. Gently fold in blueberries. Spread over cheese in crust. Cover and refrigerate at least 3 hours.
