Maple-Glazed Roasted Green Beans and Carrots

Ingredients

  • 1 1/2 lbs. fresh green beans, trimmed
  • 1 (8oz. ) package baby carrots quartered lengthwise
  • 2 tbsp. olive oil
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1/4 cup pure maple syrup
  • 1 tbsp. apple cider vinegar
  • Garnish: chopped fresh parsley

Preparation

Step 1

1. Preheat oven to 450. Line a rimmed baking sheet with aluminum foil.

2. Combine green beans and carrots on prepared baking sheet. Drizzle with olive oil; sprinkle with salt and pepper, tossing gently to coat. Bake for 10 minutes. Drizzle with syrup and vinegar; bake for 5 minutes longer or to desired degree of tenderness. Garnish with fresh parsley, if desired.
