Ingredients

  • 8 OUNCES extra-lean ground beef (95%)
  • 1/3 cup chopped tomato (1 small)
  • 1/3 cup chopped red sweet pepper
  • 1 T red wine vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon olive oil
  • 2 romaine lettuce leaves, large ribs removed
  • 2 8-inch whole wheat 96% fat free heart healthy tortillas such as Mission brand

Preparation

Step 1

1. In a medium skillet cook ground beef over medium-high heat until browned, using a wooden spoon to break up meat as it cooks. Drain off fat. Stir tomato, sweet pepper, vinegar, cumin and oil into meat in skillet.

2. Place a romaine leaf on each tortilla. Spoon half of the cooked ground beef mixture on top of each lettuce leaf.

3. Completely roll up each filled tortilla. If desired, secure roll-ups with skewers.
