Ingredients
- 3 tbsp vegetable oil
- 1 medium onion, cut in half and sliced
- 1 red bell pepper, cored, seeded and thinly sliced
- 1 lb boneless skinless chicken breast halves, cut into 3/4 inch chunks
- 6 oz snow peas, trimmed
- crushed red chili flakes
- 1 tsp. minced ginger (1 to 2)
- 1/3 cup hoisin sauce
- 2 tbsp water
- 1/3 cup dry-roasted peanuts, or cashews
Preparation
Step 1
1. Heat 2 tbs oil over medium high heat in a large skillet. Add onion and cook for 2 to 3 min.
2. Add the red pepper and cook until both onion and pepper are browned around the edges, 4 to 6 min. Remove vegetables from skillet and set aside.
3. Pour remaining oil into skillet. Sprinkle chicken with salt and pepper and cook , stirring frequently until all sides are browned, 2 to 3 min.
4. Stir in snow peas and sprinkle in some chili flakes. Add ginger. Reduce heat to medium low and stir in hoisin sauce and water. Simmer for 1 min to wilt snow peas and finish cooking chicken(don't over cook).
5. Sprinkle with peanuts or cashews and serve over rice.
