Ingredients
- 1/2 Tablespoon dijon mustard
- 1/2 Tablespoon stone ground mustard
- 1 teaspoon Worcestershire sauce
- 1 teaspoon soy sauce
- 1 clove garlic -- crushed
- Salt and pepper -- to taste
- 1/4 cup brown sugar
- 2 Tablespoons lemon juice
- 1/2 cup apricot preserves
- 2 chickens -- cut up
- 1 15 ounce can apricots -- drained, cut in half
Preparation
Step 1
Preheat oven to 350. In a bowl, mix the mustard, Worcestershire sauce, soy sauce, garlic, pepper, brown sugar, lemon juice and apricot preserves.
Coat chicken generously with apricot mixture. Bake uncovered for 1 hour, basting occasionally. Remove from oven and surround chicken with apricot halves. Return to oven and bake an additional 15 minutes.
