Ingredients
- Mix together:
- 2 c. flour
- 2 tsp. cinnamon
- 1 ¼ c. white sugar
- ½ tsp. salt
- 2 tsp. baking powder
- Stir in:
- 2 c. grated carrots
- ½ c. coconut
- ½ c. raisins
- 1 apple peeled, cored & grated
- ½ c. walnuts
Preparation
Step 1
In a bowl, beat 3 eggs, 1 c. salad oil, ½ tsp. vanilla. Stir into flour mixture until batter is just combined. Spoon into well greased muffin cups, filling to the top. Bake 350˚ for 20 min. Makes 14 large muffins.
