Ingredients

  • Filling:
  • 1 1/2 c. flour
  • 1/2 tsp. salt
  • 1 Tbsp. baking powder
  • 1/4 c. butter
  • 1 egg
  • 1/2 c. milk
  • 4 c. chopped rhubarb
  • 1/2 c. sugar
  • Topping:
  • 1 c. sugar
  • 1 c. flour
  • 1/3 c. butter

Preparation

Step 1

In med. bowl, combine flour, salt, baking powder and sugar. Cut in butter until crumbly. Beat egg and combine with milk. Make a well in the dry ingred. and add the egg mixture all at once. Stir to make a soft dough. Spread in a greased 9x13 baking dish. For the filling, toss rhubarb with sugar in a lg bowl. Spoon over the batter. Topping: In a small bowl or food processor, combine the flour and sugar. Cut in butter until mixture resembles coarse crumbs. Sprinkle over the rhubarb. Bake at 350F for 45-50 min. Serve warm.
