Ingredients

  • 6 Tbp butter
  • 2 Tbp cooking oil
  • 4 pounds spanish onions around 8 large
  • 1 tsp salt
  • 3 Tbp flour
  • 9 10oz cans of campbells beef consomme and beef broth mixed plus 9 cans of water or you can make 180 oz beef broth
  • 1/2 cup brandy
  • 2 garlic cloves chopped fine

Preparation

Step 1

Set a large pot on a low flame and add the beef stock or campbells broth and water. Keep it covered and let is come to a low boil.
In a large fry pan add the butter and oil. Medium chop the onions and add to the fry pan. Saute the onions over medium heat for about 20 minutes until they all become translucent and soft. Now sprinkle the flour and salt over the onions and continue to stir. Coat the onions and fry for about 3 more minutes. Add the cooked onions to the pot with the boiling beef broth. Stir. Add a small amount of the broth to the fry pan to deglaze and add this back to the pot. Add the garlic and brandy and stir. Lower heat to a low simmer and let the soup cook for 3 to 5 hours. Soup will become brown. Now bring the heat up and crack the top on the pot. Let the soup reduce until it becomes thicker and too your taste. If the soup becomes to consentrated add more water and simmer a little longer.
Serve in Onion soup bowls with thin sliced swiss cheese in the bottoms of the crocks. The hot soup will melt the cheese.
