Ingredients

  • 2 1/2 C chicken, cooked, shredded
  • 2 tbs olive oil
  • 1/2 C onion, chopped
  • 2 garlic cloves, minced
  • 1/2 tbs chili powder
  • 16 oz salsa
  • 1/2 tsp ground cumin
  • 1/2 tsp cinnamon
  • pinch of salt
  • 6 10" flour tortillas
  • 1 C re-fried beans
  • sour cream
  • Oil for basting

Preparation

Step 1

in lrg saucepan saute onion and garlic in oil until tender. Stir in chili powder, salsa, cumin, and cinnamon. Stir in shredded chicken. Let cool. Grease rimmed 15"x10" pan. working with one tortilla at a time, spoon a heaping tbs of beans down the center, top with 1/2 c chicken mixture. Fold shut. Place seam side down. Brush all sides with oil. Bake 20-25 mins or until golden brown and crisp. Turning every 5 mins and basting with oil.
