Rhubarb Crunch

  • Combine:
  • 1 cup flour
  • 3/4 cup oatmeal
  • 1 cup brown sugar
  • 1 tsp. cinnamon
  • 1/2 cup butter or margarine, cold, cut in pieces
  • Combine dry ingredients. Add small pieces of butter and mix until crumbly. Press half of mixture into greased 9x13-inch pan. Cover with 4 cups of diced rhubarb.
  • 1 cup sugar
  • 1 cup water
  • 2 Tbsp. corn starch
  • 1 tsp. vanilla



Step 1

Mix cornstarch with sugar. Add water and vanilla. Cook until thick or clear. Pour over rhubarb. Top with remaining crumbs. Bake about 60 minutes at 350 degrees. Cut into squares and serve warm, either plain, or with whipped cream or ice cream.
