Ingredients
- 4-5 pound Rib Roast with or without bone.
- 1/4 cup black pepper
- 1/8 cup salt

Preparation
Step 1
Remove roast from packaging, rinse well. Pat completely dry.
Bring roast to room temperature.
Preheat oven to 450 degrees.
Mix salt and pepper in small bowl.
Rub mix to coat roast.
Place roast on a rack in a pan with the rib side down and the fatty side up.
Roast at 450 degrees for 15 minutes.
Drop temperature to 350 degrees.
Roast until internal temperature (stay away from the bone while checking temp)reaches 140 - 145 degrees for medium.
Let roast sit covered with foil for 20 minutes before serving.
