Ingredients

  • 3 Tbp butter
  • 1 small onion chopped
  • 4 cups frozen shredded hash browns
  • 1 pound ground sausage
  • 2 1/4 cups whole milk
  • 8 brown eggs
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 Tbp dijion mustard
  • 8 cups or 1/2 pound grated cheddar
  • 2 cups or 1/2 pound grated parmesan
  • 8 cups cubed french or italian bread with the crust removed.

Preparation

Step 1

Preheat oven to 350 degrees F.

Grease a 9" casserole dish and set aside. Melt the butter in a large fry pan. Add the onions and saute over medium heat until soft, about 5 minutes. In a second fry pan saute the sausage, breaking apart any large clumps. When sausage is cooked remove it from the pan.
In a large bowl combine the milk, eggs, salt, pepper, nutmeg and mustard and blend.
To assemble, spread the onions and hash browns evenly at the bottom of the greased dish. Place the bread cubes evenly on top of the hash browns. With a slotted spoon distribute sausage as the third layer. Pour the milk/egg mixture over these layers. Add the Parmesan as the next layer and the last layer is the cheddar. In the last 5 minutes of cooking add a little fresh cheddar on top.
Bake the casserole for 45 minutes until puffed and golden brown.
