Ingredients

  • 5 large egg yolks
  • 1/3 cup plus 3 tablespoons sugar (divided)
  • 1/2 cup sweet marsala wine
  • 1 Tbp water
  • 1/2 cup heavy cream
  • 2 tsp vanilla extract
  • 1 pound mascarpone cheese, room temperature
  • 1 cup cooled espresso, or strong coffee
  • 3 Tbp rum or brandy
  • 3 Tbp sugar
  • 24 lady fingers cookies/biscuits
  • 5 oz semi-sweet chocolate, grated

Step 1

1. In a medium, heat-proof bowl, beat the egg yolks and sugar until pale yellow. Whisk in the marsala wine and the water. Set the bowl in a deep skillet of barely simmering water and whisk the mixture until it reaches 160 degrees (use a baking thermometer to gauge this). Remove the bowl and cool 15 minutes, stirring frequently.
2. In another bowl, beat the cream and vanilla extract until it forms soft peaks. Place the cheese in a third large bowl, and gently fold in the whipped cream and the cooled egg mixture.
3. In a small bowl, combine the espresso, rum or brandy, and the remaining 3 tablespoons of sugar. Dip the lady fingers cookie biscuits into this mixture and arrange them in a 9" x 13" baking dish or casserole dish.
4. Spread 1/2 of the cheese mixture over these biscuits, and sprinkle with 1/2 of the grated chocolate. Repeat these two layers again, one on top of the other. Sprinkle the soft cocoa over all when done. Cover and refrigerate for 24 hours before serving.
