  • 1/2 C Butter, Softened
  • 1 C Sugar
  • 1/2 tsp Vanilla
  • 1 Egg
  • 1 tsp Lemon Zest
  • 1 Tbs Lemon Juice
  • 1/4 tsp Salt
  • 1/4 tsp Baking Powder
  • 1/8 tsp Baking Soda
  • 1 1/2 C Flour
  • Powdered Sugar for rolling cookies in

Step 1

Preheat oven to 350 Degrees

Cream butter and sugar. Mix in vanilla, egg, zest, and lemon juice.

Stir in all dry ingredients, except for powdered sugar, just until combined.

Roll tsp-sized balls in powdered sugar and press slightly on a greased cookie sheet.

Bake for 7 minutes (original says 9-11 or reduce time 2 minutes with non-stick pans) Bottoms should be barely brown. Cook 2-3 minutes then transfer to a wire cooling rack.
