Quick Chicken And Wine

Ingredients

  • 4 skinless, boneless chicken cutlets
  • 2 eggs, beaten
  • 1/2 c flour
  • 1/2 c bread crumbs
  • 1/2 c Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 pinch ground black pepper
  • 4 tablespoons butter
  • 4 TBSP Olive Oil
  • 1 c white wine
  • 1 TBSP butter
  • 1/2 tsp garlic, diced

Preparation

Step 1

Mix bread crumbs, spices and parmesean cheese together and pour into shallow plate. Divide chicken into three parts and coat with flour before dipping chicken in eggs. Coat well with Parmesan cheese mixture. Repeat until all of the chicken pieces are well coated.

In a skillet, melt butter or margarine over medium high heat. Add oil. Cook chicken, stirring frequently, until golden brown. Place chicken on baking sheet and bake in 350 oven for 30 min.

Add butter and garlic to sauce pot, saute for 2-3 min. Add wine and reduce. Cover and simmer over low heat adding corn starch if necessary to thicken.
