Ingredients

  • Crepes:
  • 1 1/4 cups flour
  • 4 eggs
  • 1/4 cup Grand Marnier
  • 2 Tbp butter clarified
  • 3 Tbp sugar
  • 1 3/4 cups whole milk
  • 1/4 tsp baking powder
  • Sauce:
  • 6 Tbp sugar
  • juice of 2 large oranges
  • 1 Tbp sugar
  • 2 Tbp dark rum
  • 1/4 tsp lemon juice
  • 1/2 cup butter
  • 1/4 cup Grand Marnier

Step 1

Crepes:

With a blender combine the flour, sugar, eggs, milk, Grand Marnier, and butter. Blend at high speed for a few seconds. Scrape down the sides of the blender and blend again for about 40 seconds. Pour batter into a mixing bowl and let it sit in the refrigerator for at least 2 hours.

Sauce:

Add 1/2 cup orange juice, sugar and lemon juice and mix until dissolved. In a deep bowl cream the butter with 1 Tbp sugar until light and smooth. Warm the butter in a pan stirring so that the mixture melts evenly. Add orange juice mixture and cook until the sauce is reduced to 1/2 cup. Add Grand Marnier and rum. Ignite the sauce and roll around until the flame dies out. Spoon over crepes.

Make the crepes using the crepe batter and a crepe pan.
